A very dry ginjo sake made from 100% Iwai rice! A very dry ginjo made with 100% Iwai, a premier sake rice representative of Kyoto Prefecture. Brewed in small batches, it is bottled unfiltered after pressing, then pasteurized in the bottle and stored refrigerated for meticulous quality control. It offers a ginjo aroma with grainy notes. Clean and free of any off-flavors, it finishes as a crisp, refreshing, very dry sake with a sharp, tightly focused character. Right after opening, a faint effervescence gives it a vivid, lively flavor, which gradually settles into a well-rounded harmony.
