When we set out to work on an existing beer, we don't simply aim to increase its impact—we're constantly working, at the same time, on how to make that brilliant impression last. Unlike homogenized big-brand beers, in craft beer that preserves real deliciousness the raw ingredients are always changing over time, so to maintain quality the beer itself must be adjusted to keep pace. The changes to this batch of "6-DAY WEEKEND" aren't dramatic, but they've reliably improved both the impact and the stability of the beer. On the flavor side, we wanted a touch more softness, so we increased the amount of wheat. We also raised the mash temperature during brewing to slightly increase the final gravity, adding a subtle malt sweetness. We also gently revisited the hop composition. We love the flavor and aroma of our existing blend of Citra, Simcoe, and Waimea, so we kept that as it is; instead, by using more highly concentrated hop oil we reduced the plant-derived solids that cause off-flavors while raising the overall hop level. This gives a greener, fresher, cleaner finish and a slightly more pronounced hop aroma. And in a beer already known for its drinkability, the fruity flavor and aroma now come through more vividly, so its appeal feels doubled. Each of these changes is subtle, but there is one big point worth highlighting: the cans of this beer are now finished with in-can secondary fermentation (the keg product has had its recipe renewed but continues to use the conventional method). After months of testing that confirmed the hop aroma would be equal to or better than before, we decided to make the switch. This groundbreaking method reduces the amount of oxygen in the can after filling, preventing the oxidation and degradation of the hop oils. It also naturally creates a more natural, lively carbonation that further enhances the signature flavor of 6-DAY WEEKEND.
